Where did you get the material that compares the flavor of ortolans and reed birds. The late French president Mitterand chose a dinner of ortolans when he knew that his end was near. Those fine bones are used as a spoof in the movie Gigi, where her aunt instructs her on the gentile art of attacking them at table.
